UNS Sorrel Microgreens Creamy Soup

Ingredients 1 tbsp olive oil 1 small onion, chopped 2 cloves garlic, minced 2 medium potatoes, peeled and diced 3 cups vegetable stock 1/2 cup heavy cream (or coconut milk for vegan option) 1 cup UNS Sorrel Microgreens (plus extra for garnish) Salt and pepper to taste Method Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant (about 3 minutes). Add the diced potatoes and cook for 2–3 minutes, stirring occasionally.
