Ingredients
- 4 small corn or flour tortillas
- 1 cup cooked black beans
- 1/2 cup roasted or grilled sweet corn kernels
- 1/2 cup UNS Red Cabbage Microgreens
- 1/2 avocado, diced
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup crumbled feta cheese (optional)
- 2 tbsp sour cream or plain Greek yogurt (optional)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- Salt and pepper to taste
Method
- Prepare the black beans: Heat a skillet over medium heat and add olive oil. Add the cooked black beans, smoked paprika, and cumin. Stir well and cook for 2–3 minutes until warmed through. Season with salt and pepper to taste.
- Warm the tortillas: Heat the tortillas in a dry skillet for 30 seconds on each side or wrap them in foil and warm them in the oven at 300°F (150°C) for 5 minutes.
- Assemble the tacos: Divide the seasoned black beans evenly among the tortillas. Top with roasted or grilled sweet corn, diced avocado, and diced tomatoes.
- Add the microgreens: Generously sprinkle UNS Red Cabbage Microgreens over each taco for a fresh, crisp flavor.
- Optional garnishes: Add crumbled feta cheese and a dollop of sour cream or Greek yogurt if desired.
