UNS Basil Pesto Pasta

A classic dish elevated by the aromatic freshness of UNS Basil, this pesto pasta is both flavorful and satisfying. Ideal for a quick dinner or a delightful lunch. Ingredients 2 cups fresh UNS Basil leaves 2 cloves garlic 1/4 cup pine nuts 1/2 cup grated Parmesan cheese 1/2 cup olive oil Salt and pepper to taste 200g pasta of your choice Method Cook the pasta according to package instructions. Drain and set aside. In a food processor, combine UNS Basil leaves, garlic, pine nuts, and Parmesan cheese. Pulse until finely chopped. With the processor running, slowly add olive oil until the mixture is smooth. Season the pesto with salt and pepper to taste. Toss the cooked pasta with the pesto until evenly coated. Serve warm, garnished with additional Parmesan if desired.

Ingredients 2 cups wild arugula (or baby rocket ) 1 orange, peeled and sliced into rounds or segments 1/4 cup UNS Edible Flowers (e.g. mixed, violas, nasturtiums) 2 tablespoons chopped walnuts or pistachios (optional, for crunch) 1 tablespoon crumbled goat cheese or feta (optional) 2 tablespoons extra virgin olive oil 1 tablespoon freshly squeezed orange juice 1 teaspoon white wine vinegar or rice vinegar 1 teaspoon orange blossom water 1 tablespoon finely chopped UNS Basil microgreen Salt and black pepper, to taste Method Make the dressing: In a small bowl, whisk together olive oil, orange juice, vinegar, orange blossom water, and chopped basil. Season with salt and pepper to taste. Assemble the salad: In a large bowl or plate, gently layer wild arugula, orange slices, edible flowers, and nuts or cheese if using. Dress & serve: Drizzle the basil-orange blossom dressing over the salad just before serving. Gently toss or leave undisturbed for presentation. Serve chilled.

Ingredients 6–8 fresh UNS Figs, sliced in half or thick rounds 1/3 cup brown sugar 3 tablespoons unsalted butter 1 cup all-purpose flour 1/2 cup almond flour (or sub with more all-purpose) 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/2 cup u nsalted butter, softened 1/2 cup granulated sugar 2 eggs 1 teaspoon vanilla extract 1/2 cup plain yogurt or sour cream Method Prepare the fig topping: Preheat oven to 175°C (350°F). In a small saucepan, melt 3 tbsp butter with brown sugar until bubbly. Pour into a greased 9-inch cake pan. Arrange fig slices on top, cut side down. Make the cake batter: In a bowl, whisk together flours, baking powder, soda, salt, and spices. In another bowl, cream butter and sugar until light. Beat in eggs, one at a time, then vanilla. Mix in yogurt. Gradually add dry ingredients, mixing until just combined. Assemble & bake: Pour batter over the figs and smooth the top. Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean. Cool & invert: Let cake cool in the pan for 10 minutes, then carefully invert onto a serving plate. Allow to cool slightly before serving.

Place halved UNS Black Grapes on a baking tray, drizzle with olive oil, sprinkle with salt and roast for 10 minutes until soft and slightly blistered. Spread goat cheese evenly over flatbread. Top with roasted grapes and thyme. Drizzle with honey and bake for 5 minutes until the edges are golden. Serve warm, drizzled with extra honey.
