Ingredients
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 1 zucchini, diced
- 1 cup diced tomatoes (fresh or canned)
- 1/2 cup green beans, chopped
- 1 cup vegetable stock or water
- 1/2 tsp dried thyme

Method
