- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, thinly sliced

- 1/4 cup red bell pepper, thinly sliced
- 1 tbsp olive oil
- 1 tbsp lemon juice or apple cider vinegar
- 1 tsp honey (optional)
- Salt and freshly ground black pepper, to taste
- 1 tbsp toasted sunflower seeds or pumpkin seeds (optional)
- 1 tbsp crumbled feta or goat cheese (optional)
- Fresh herbs (optional: parsley, basil, or mint)
Method
