Salad with UNS Green Batavia Lettuce and Grilled Chicken

A fresh and hearty salad featuring crisp UNS Green Batavia Lettuce paired with tender grilled chicken, cherry tomatoes, cucumber, and croutons. Lightly tossed in a creamy herb dressing, this salad is a perfect blend of nutrition and flavor.

Ingredients

  • 4 cups UNS Green Batavia Lettuce, washed and torn into bite-sized pieces
  • 2 cups chicken breasts, grilled and sliced
  • 1 cup cherry tomatoes, halved cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 cup croutons
  • ¼ cup grated Parmesan cheese
  • 1 avocado, sliced avocado, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon fresh parsley, chopped
  • Salt and pepper to taste

Method

  1. Season the chicken breasts with salt and pepper, then grill until fully cooked (about 5 minutes per side). Let cool slightly, then slice into thin strips.
  2. In a large salad bowl, combine the Green Batavia Lettuce, cherry tomatoes, cucumber, and croutons.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, parsley, salt, and pepper until emulsified.
  4. Add the grilled chicken slices to the salad bowl. Drizzle the dressing over the salad and toss gently to coat evenly.
  5. Sprinkle grated Parmesan cheese over the salad and add avocado slices if desired. Serve immediately.
