UNS Thyme Lemon Roasted Potatoes

These UNS Thyme infused roasted potatoes are crispy on the outside, soft on the inside, and bursting with a rich, earthy aroma. Thyme is known for its antibacterial properties and is a perfect herb to complement the natural sweetness of roasted potatoes. Serve these as a delicious side dish or snack.

Ingredients

  • 4 medium potatoes, washed and cubed (Yukon Gold or baby potatoes work best)
  • 2 tbsp olive oil (for crispiness)
  • 1 tbsp UNS Thyme, finely chopped
  • 1 tsp garlic powder for extra depth
  • 1/2 tsp salt and freshly ground black pepper
  • 1 tbsp lemon zest for a bright, citrusy finish

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss cubed potatoes with olive oil, UNS Thyme, garlic powder, salt, and pepper until evenly coated.
  3. Spread potatoes in a single layer on the baking sheet.
  4. Roast for 30 minutes, flipping halfway for even crispiness.
  5. Sprinkle with lemon zest before serving to enhance the flavors.
