A fragrant and flavorful pasta made with UNS Thai Basil Microgreens.
Ingredients
- 200g pasta of choice
- 1/2 cup UNS Thai Basil Microgreens
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 clove garlic
- Salt and pepper to taste
Method
- Bring a pot of salted water to a boil and cook the pasta according to the package instructions. Reserve 1/4 cup of the pasta water, then drain the rest and set the pasta aside.
- In a blender or food processor, combine the UNS Thai Basil Microgreens, grated Parmesan cheese, olive oil, and garlic. Blend until smooth. If the pesto is too thick, add a bit of the reserved pasta water to reach your desired consistency.
- Toss the cooked pasta with the pesto sauce until it is evenly coated. Add salt and pepper to taste.
- Transfer the pasta to serving bowls and garnish with extra Parmesan cheese and a few microgreens if desired. Serve warm.
