Spinach and Herb Stuffed Mushrooms

Delicious mushrooms stuffed with UNS Spinach and herbs.

Ingredients

  • 12 large button mushrooms, stems removed
  • 1 cup Lettuce Spinach, chopped
  • 1/4 cup UNS Parsley Microgreen, chopped
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method

  1. Sauté spinach, parsley, and garlic in olive oil until softened.
  2. Mix with breadcrumbs and season. Stuff into mushrooms.
  3. Bake at 375°F (190°C) for 20 minutes.
