Radish Microgreen Salad

A crisp and refreshing salad featuring radish microgreens, fresh vegetables, and a light lemon vinaigrette. Perfect as a healthy side dish or a quick snack, this salad offers a delightful combination of textures and flavors.

Ingredients

  • 2 cups radish microgreens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced thinly
  • 1/4 cup radishes, sliced thinly
  • 1/4 cup red bell pepper, diced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 tsp honey or maple syrup (optional)
  • Fresh parsley or dill for garnish

Method

  1. Prepare the vegetables: Rinse the radish microgreens gently under cold water and pat them dry. Wash and slice the cucumber, radishes, and cherry tomatoes. Dice the red bell pepper.
  2. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, salt, black pepper, and honey (if using) to create a light vinaigrette.
  3. Assemble the salad: In a large bowl, combine the radish microgreens, cherry tomatoes, cucumber slices, radishes, and diced bell pepper. Drizzle the lemon vinaigrette over the salad and toss gently to coat.
  4. Garnish and serve: Transfer the salad to a serving plate and garnish with fresh parsley or dill for an extra burst of color and flavor.
