Lemon-Dill Roasted Chickpeas

A crunchy snack with tangy UNS Dill Microgreens.

Ingredients

  • 1 can chickpeas, drained
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/4 cup UNS Dill Microgreens, chopped
  • 1 tbsp lemon zest
  • Salt and pepper to taste

Method

  1. Toss chickpeas with olive oil, paprika, garlic powder, and salt.
  2. Roast at 400°F (200°C) for 25 minutes. Mix with UNS Dill Microgreens and lemon zest before serving.
