Dianthus Flower & Lemon Shortbread Cookies

Delicate Dianthus flowers add a slightly spicy, clove-like flavor to these buttery shortbread cookies.

Ingredients

  • 1 cup butter, softened
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 8-10 UNS Dianthus flowers (pressed & dried for garnish)

Method

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until light and fluffy.
  3. Add flour, lemon zest, and vanilla; mix to form a dough.
  4. Roll out and cut into cookie shapes.
  5. Press a UNS Dianthus Flower onto each cookie.
  6. Bake for 10-12 minutes until edges are golden.
  7. Cool and serve with tea!
