Ingredients
- 2 cups UNS Leeks, cleaned and thinly sliced
- 1 tablespoon olive oil
- 1/2 tablespoon butter
- 1 cup mushrooms, sliced (button or cremini)
- 1/2 teaspoon thyme (fresh or dried)
- Salt and pepper to taste
- 1/2 cup cream cheese or goat cheese
- 1 sheet puff pastry (store-bought or homemade)
- 1 egg (for egg wash – optional)
Method
- Caramelize the leeks In a skillet, heat olive oil and butter over medium heat. Add UNS Leeks and cook slowly for 10–12 minutes until soft and lightly golden.
- Add mushrooms and seasoning Add mushrooms and thyme, season with salt and pepper, and cook for another 5–6 minutes until everything is tender and fragrant.
- Assemble the tart Preheat oven to 200°C (392°F). Roll out puff pastry on a baking tray. Spread cream cheese over the base, leaving a 1-inch border. Top with the leek and mushroom mixture.
