Ingredients

  • 2 cups UNS Amaranth Microgreens, washed and drained
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup crumbled feta cheese
  • 1 tablespoon roasted sunflower or pumpkin seeds
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon honey
  • Salt and pepper to taste

Method

  1. In a medium bowl, gently combine red UNS Amaranth Microgreens, diced cucumber, and cherry tomatoes.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until emulsified.
  3. Drizzle the dressing over the salad mixture and toss lightly to combine
