Ingredients

  • 4 cups UNS Healthy Mix, washed and drained
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 carrot, grated
  • 2 tablespoons roasted seeds (pumpkin or sunflower)
  • ½ cup plain curd (yogurt)
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • ½ teaspoon cumin powder
  • Salt and pepper to taste
  • Fresh mint leaves, chopped, for garnish

Method

  1. In a large mixing bowl, combine UNS Healthy Mix, diced cucumber, cherry tomatoes, grated carrot, and roasted seeds.
  2. In a small bowl, whisk together curd, lemon juice, honey, cumin powder, salt, and pepper until smooth and creamy.
  3. Pour the curd dressing over the salad mixture and gently toss to coat all ingredients evenly.
